This part of Texas got some much needed rain

It is often cloudy in the mornings here in San Antonio, but that doesn't mean rain. LOL

It is just a fact of life here. I think there is a some sort of weather thingy that make rain pass by this area. But the forces that be, finally let some rain into the area. And I for one am glad. I don't have a vegetable garden. I tried growing tomatoes in pots but they died. LOL Too hot for them.

Yesterday and the day before we got some measurable amount of rain. And for one I am grateful for that. Because it cooled the over 100 temps down.

I so wanted to move to Texas for a long time. San Antonio is not where I would have picked. But it got me here so here I will stay. *smile*

For those of you who live in Texas you know what I mean. The water rationing has got to go.

Didn't have a great deal of friends here on xanga that subbed to me. But the ones that I did have were wonderful people.

I haven't been getting my xanga messages in my email. I guess that happens when you don't do a weblog in a long time. LOL

So this is a trial to see who still is out there.

Fiesta Bean Salsa Salad

Okay, now some of these ingrediants are found only in HEB stores. So I have found recipes for the ingrediants. LOL
Like below:


Giardineira Relish:
2 cloves garlic, finely chopped
1 tablespoon dried oregano
1 teaspoon red pepper flakes
1/2 teaspoon black pepper
1 (5 ounce) jar pimento-stuffed green olives, chopped
1 cup white vinegar
1 cup olive oil
Store in a clean mason jar in fridge. Let set over night before you use it.

Garlic Essence:
1 tsp. salt (flat)
1 tsp. dry mustard (flat)
1/2 tsp. sugar
1/4 tsp. lemon
1/4 tsp. pepper
4 tbs. white wine vinegar
3/4 cup light oil
2 tbs. olive oil
3 cloves garlic
Place all ingredients in a Mason jar and shake well.

Delicious.
Okay now the recipe

Fiesta Salsa Salad:
1 cup of yellow onion and tomatoe diced
3 tbs of fresh cilantro-minced
1/4 cup of Garlic Essence(if you don't want to make it I am sure you can get it at the Canyon Food website I will put the link here)

1 cup yellow,red,green pepper mix
1/2 cup of Canyon Foods Giardiniera Relish

1 can of Pinto
1 can of Black beans
Salt to taste
Drain the pinto and the black beans well before adding to the salsa salad
Let set in fridge for one hour, or make it a day ahead and it is even better over night.
Serve with totilla chips
Enjoy!
